I was researching some breakfast ideas for when I have my friends staying over and I came across overnight oats. They really seem to be taking over breakfast tables across the world. For me it was a perfect solution as I could have prepared everything in advance and just casually take it out of my fridge and get a full credit of letting my friends trying something new.
The very first time I have tried overnight oats was in Starbucks and I loved it. Unfortunately when you read the label and you see how much sugar was added to that little pot, you kind of change your mind thinking I should have had a muffin. Well that was the very first objective of those 3 flavour combination to make it without adding extra sugar as we are using a lot of fruit that is sweet enough but to make it perfect we are adding some honey.
So my idea for flavours came from just googling the overnight oats recipes. There was always a berry one and some sort or mango/pineapple flavour but I have never came across a recipe that would make a green one. Green is my favourite colour so I really wanted to make it happen.
Just a week before I was making my overnight oats I was in London and I went to Joe and the juice which is a great little place with a huge selection of juices, smoothies and light bites. I had this avocado and lemon juice that was absolutely amazing! I really wanted to recreate those flavours in my oats pot. Have a look at their menu for some interesting fruit combinations.
The three flavours of my oats are:
1. Mango and passion fruit topped with blueberries
2. Strawberry and banana topped with blackberries and pomegranate
3. Avocado and lemon topped with kiwi
3 small pots of Total zero% Greek yogurt (this is the only one with the smallest amount of sugar)
60 gram of porridge oats for each jar
1 and a half green apples (grated)
One table spoon of honey per pot
Quarter of a ripe mango
One passion fruit
Handful of blueberries (as garnish)
5 strawberries
Half of a ripe banana
5 blackberries (as garnish)
2 tablespoons of pomegranate seeds (as garnish)
Half of a ripe avocado
2 slices of lemon (no skin or zest)
Kiwi (as garnish)
Method:
1. Mix oats with grated apple. In a separate pot blend yogurt, honey and your choice of fruit.
2. Mix oats with the yogurt and top up with fruit
3. Refrigerate for at least an hour but preferably leave over night.
