This recipe is an absolute must have in every cook book!! It’s super easy and very delicious. I am a number one peanut butter fan and I have been looking for a good cookie recipe for a very long time. The very first peanut butter cookie recipe I have tried was few years ago from the hummingbird bakery cookbook that I borrowed from my friend. The cookies were delicious but the taste of peanut butter wasn’t coming through enough.

So the search continued and I came across many recipes that are just based on peanut butter, sugar and egg that’s exactly what I was looking for. I decided to make few small twists and here I present you with the flourless peanut butter cookies.
60g of rolled oats (make sure they are gluten free for gluten free recipe)
250g of crunchy peanut butter
1 teaspoon of cinnamon
1 teaspoon of vanilla paste
1 teaspoon of baking soda
75g of brown sugar
1 egg
2 tablespoons of honey
Method:
1. In a small bowl mix oats, baking soda and cinnamon.
2. In a medium bowl whisk together egg, sugar, vanilla paste, honey and peanut butter. When combined add the dry mixture and combine until smooth. Depending on how cold your peanut batter is it could require a little bit of patience. Refrigerate the dough for an hour.
3. Preheat the oven to 190C. Spoon one tablespoon of dough for each cookie on a baking tray lined with greaseproof paper (press gently to flatten the cookies) and bake for 9 minutes.
